We are convinced that this agricultural co-operative is producing some of the best value wines in Italy or, for that matter, Europe. Founded in 1989 and based in the town of Cellino San Marco in the centre of the Salento DO, this is a very modern and well funded operation. Even the humble Canonico spends time in real French oak barrels (Troncais and Allier) and no expense or effort is spared to ensure that the best is made of their abundant supply of top quality grapes.
