With all the other great white wines that we have, it is easy to overlook the Chablis from Collet. This domaine, considered by several as the finest, puts out remarkably consistent, quality wines. From the village level ‘straight’ Chablis vinified in large wooden ‘foudres’ to the monumental Valmur, 100% vinified and aged in cask – a third of which is new oak. In between are the Premier Crus of Vaillons, vinified half in stainless steel, half in foudres - so more minerally and crisp. Tonnerre and Mont de Millieu – both vinified 100% in cask, which adds extra weight to the wines. Unfortunately these last two very serious Premier Crus are only available in very small quantities - they need extra year or two in bottle to round off. Raveneau and Dauvissat are better known, legendary domaines of Chablis that are incredibly hard to get hold of, but following a recent tasting we doubt that they are any better than these marvellous wines from Collet.
